BCB’s 2014 Beer Roster

We used to keep copious notes detailing our brew day, our recipes, our new tricks, everything.

And then we had kids.

But I am determined to revive the practice of keeping detailed notes this year if it kills me. So here they are as an accompaniment to our beer roster for the season. Who knows? Maybe they’ll inspire one of you to copy a brew!

Brewing!Ace Of Spades Black IPA
-Brewed 9/13/14. Target OG: 1.068, Actual OG: 1.060
-Based on the Northern Brewer kit, but we switched out Columbus for the Chinook hops.
-Quick recipe for extract with specialty grains: 6 lbs Gold LME, 2.5 lbs Gold DME (15 min late addition); 0.625 lbs Caramunich III, 0.75 lbs Briess Midnight Wheat; 1 oz Mangum (60 min), 1 oz Columbus (20 min), 0.5 oz Centennial (20 min), 1.5 oz Centennial (5 min), 1 oz Centennial and 1 oz Citra for dry hopping
-Based on our target OG, we rehydrated and pitched two packets of Safale 05, which may have been overkill but oh well. We’ll see what we get for final gravity.
-Racked to secondary and dry hopped 9/24/14, SG 1.014
-Kegged 10/4/14, FG 1.012
-Started drinking 10/12/14: Both DB and I think it’s pretty tasty. It’s hoppy, but it has a nice malt backbone to back it up. Some good roasty notes. Dry, not sweet.

K’s Session IPA
-Brewed 9/28/14. Target OG: 1.045 (And we were spot on!)
-Based on Northern Brewer’s Conundrum IPA but, again, we tweaked the hops a bit
-Quick Recipe for Extract with Specialty Grains: 3.5 lbs Pilsen LME, 3.5 lbs Pilsen LME (20 min late addition), 1 lb Crystal 20; 0.5 oz Amarillo (First Wort Hop), 0.5 oz Centennial (60 min), 0.5 oz each Simcoe and Amarillo (20 min), 0.5 oz each Amarillo and Ahtanum (5 min); 0.5 oz each Amarillo, Centennial, Simcoe, and Ahtanum for dry hopping; 1 pack Safale 05
-Racked to secondary and dry hopped 10/9/14, SG 1.010
-Kegged 10/19/14, FG 1.008
-This was so incredibly good! And drinkable! Just what we were hoping to get with this recipe. Sadly, we tore through the keg as it was so delicious. Which means we’ll just have to brew it again. 🙂

West Coast Cat
-Brewed 10/4/14, Target OG 1.086, Actual OG 1.084
-Based on Northern Brewer’s Cascade Mountains West Coast IPA, but we added some things to make it our own
-Quick Recipe for Extract with Specialty Grain: 3.5 lbs Gold LME + 1 lb Gold DME, 6 lbs Gold LME (30 min late addition), 2 lbs Cane Sugar (5 min);  8 oz Crystal 20; 1 oz Summit (FWH), 0.5 oz Summit (30 min), 2 oz Cascade (20 min), 2 oz Cascade + 0.5 oz Summit (0 min); 4 oz Cascade for dry hopping; 3 packs Wyeast 1056
-Racked to secondary and dry hopped 10/19/14, SG 1.012. This was the first time we tried putting the hop pellets into a bag and putting that into the secondary, in an attempt to decrease the beer lost to hop sludge. This was a great idea in theory, less so in practice. It was darn near impossible to get the bag back out of the carboy when it was swollen with mushy hops. Perhaps we’ll try it again with a cheapo muslin bag that we can just cut to pieces and get out that way?
-Kegged 10/25/14, FG 1.012
-This brew ended up being kind of bad. Not skunked bad, but too many residual sugars so that it was incredibly bitter AND sweet at the same time bad. Neither DB nor I has really touched it, as we don’t want to waste our beer calories on it. We’re going to have to figure out something to do with it soon, though, as we need that spot in the keezer.

Surly Furious 2014
-Brewed 10/12/14, Target OG 1.065, which we hit spot on
-This was an amalgamation of Northern Brewer’s Surly Furious and Surly Furiouso recipes, with a little DreadBrewer flair thrown in
-Quick Recipe for Extract with Specialty Grain: 3 lbs Gold DME + 6.5 lbs Gold LME (30 minute late addition); 12 oz English medium crystal, 8 oz Belgian aromatic, 2 oz British roasted barley; 0.5 oz Amarillo FWH, 1.5 oz Warrior (60 min), 0.5 oz each Amarillo, Ahtanum, and Simcoe (20 min), 0.5 oz each Amarillo, Ahtanum, and Simcoe (10 min), 1 oz Amarillo (Flame out); 5 oz Simcoe, 2 oz Ahtanum, 0.5 oz Warrior, and 0.5 oz Amarillo for dry hopping; 2 vials White Labs WLP007 Dry English Ale
-We intended to use 3 vials of yeast, but one was actually bad, so we decided to just pitch the two good vials and hope for the best.
-Racked to secondary and dry hopped 10/25/14, SG 1.018
-Kegged 11/2/14, FG 1.014
-This turned out pretty well – nice and hoppy but with a good malt backbone to back it up.

Liger India Brown Ale
-Brewed 10/26/14, Target OG 1.050, which we hit spot on
-I told the DreadBrewer that I wanted a nice brown ale with a big,chewy mouth feel and a robust hop profile – and this is the recipe he came up with for me.
-Quick Recipe for Extract with Specialty Grain: 6 lbs Maris Otter LME + 10 oz Gold DME (30 minute late addition); 1 lb Crystal 80, 10 oz Crystal 120, 8 oz Special Roast, 6 oz Pale Chocolate, 4 oz Carafa II; 0.5 oz Amarillo FWH, 1 oz Cascade (60 min), 1 oz Simcoe (30 min), 1 oz each Cascade and Amarillo (Flame out); 0.5 oz Amarillo, 1 oz Cascade, and 1 oz Simcoe for dry hopping; 2 packs Wyeast 1968 London ESB
-Racked to secondary and dry hopped 11/12/14
-Kegged 11/19/14, FG ? (DB did this by himself, as I was too tired. God bless him. Unfortunately, we forget the FG.)

Off The Topper IIPA
-Brewed 11/22/14 (whoa! Did we really go nearly a month without brewing!?), Target OG 1.070, Actual OG 1.070.
-We had brewed a Heady Topper clone last year that didn’t turn out as well as we had hoped, so when we saw the kit from Northern Brewer, we had to give it a try.
-Quick Recipe for Extract with Specialty Grain: 1 lb Gold DME, 1 lb Wheat DME, 6 lbs Gold LME (15 min late addition), 1 lb Brun Leger sugar (flameout); 12 oz Baird’s Light Carastan Malt; 2 x 5mL Hop Shots (60 min); 2 oz Simcoe, 1 oz Columbus, 0.5 oz Apollo (Hop Stand for 15 min after flameout); 1 oz each Columbus, Simcoe, Centennial, and Amarillo, and 0.5 oz Apollo (Whirlpool Hops for 15 min when wort reaches 180 during chilling); 1 oz Simcoe, 0.5 oz each Columbus, Amarillo, and Centennial, and 0.25 oz Apollo (First dry hop for last 4 days in primary), 1 oz Simcoe, 0.5 oz each Columbus, Amarillo, and Centennial, and 0.25 oz Apollo (Second dry hop for last 4 days in secondary); 3 packs Wyeast 1056
-Racked 12/10/14, forgot SG
-Kegged 12/21/14, FG 1.008

WitteCat Witbier
-Brewed 12/01/14, Target OG 1.050, Actual OG 1.050
-We had planned on making this a blackberry witbier using berries frozen from our garden, but the primary beer smelled so good, we decided to forgo the fruit this time. If it’s really good, we may try making it again and adding the fruit to the second batch.
-Quick Recipe for Extract with Specialty Grain: 1 lb flaked oats, 1 lb Pilsen malt; 6 lbs Wheat LME, 1 lb Wheat DME; 2 oz Hallertau (60 min): 0.4 oz coriander seeds (slightly crushed), 0.03 oz chamomile, 1.5 oz orange peel (5 min); 2 x White Labs 400 Belgian Wit Ale
-Racked 12/21/14, SG 1.010
-Kegged 12/28/14, FG 1.010

Freak Of Nature Clone
-Brewed 12/13/14, Target OG 1.073, Actual OG 1.070
-This is the DreadBrewer’s absolute favorite beer of all time, so we decided to try our hands at a clone recipe and hopefully save us a ton of money at our local bottle shop. The basic recipe was from Sunday Session on the Brewing Network. (They have podcasts, for those of you not in the know…)
-Quick Recipe for Extract with Specialty Grain: 1 lb Crystal 10; 6 lbs Pilsen LME, 3 lbs Pilsen DME, 1 lb Corn Sugar; 1 x Hop Shot and 0.5 oz Chinook, 1 oz Warrior (60 min); 0.5 oz Chinook, 1 oz Columbus (30 min); 1 oz Columbus (10 min); 0.5 oz El Dorado and 1 oz Centennial (5 min); 0.5 oz El Dorado and 1 oz each Centennial and Simcoe (Flame Out); Dry Hop: 1 oz each Amarillo, Centennial, Columbus, and Simcoe (18 days); Second Dry Hop: 1 oz each Amarillo, Centennial, Columbus, and Simcoe (14 days); 3 x Wyeast 1056
-Racked ?

K’s Session IPA
-Brewed 1/1/15. Starting Gravity 1.050 (And we were spot on!)
-Based on Northern Brewer’s Conundrum IPA but, again, we tweaked the hops a bit
-Quick Recipe for Extract with Specialty Grains: 3.5 lbs Pilsen DME, 3.5 lbs Pilsen DME (20 min late addition), 1 lb Crystal 20; 1 oz Columbus (First Wort Hop), 0.5 oz Centennial (60 min), 0.5 oz each Simcoe and Amarillo (20 min), 0.5 oz each Amarillo and Ahtanum (5 min); 0.5 oz each Amarillo, Centennial, Simcoe, and Ahtanum for dry hopping; 1 pack Safale 05
-We didn’t have the same hops on hand as the first time, so I know we changed them up a bit – but I can’t remember what we put in! Damn you, inability to remember to write things down!!! Hopefully it will still be just as delicious as the first batch…

Fermenting!**For reference, we steep our grains in 1 gallon of water at 155 degrees for 30 minutes and rinse with 1 gallon. This gets added to 5 gallons in the kettle, bringing our pre-boil volume to 7 gallons. And we always do a 60-minute boil. Any variation from this will be noted in the quick recipe.**
